Product Development That Solves Issues While Showcasing Regional Appeal Through the Use of Non-Standard Fruits

Redhorse Corporation is a company that develops products utilizing regional resources throughout Japan. In this project, they focused on non-standard apples from Aomori Prefecture, collaborating with local farmers to develop a new dessert. The “Hirosaki Tiramisu” uses preserved (sugar-soaked) non-standard apples as its main ingredient, packed with the charm of the local area.
The development of “Hirosaki Tiramisu” was built upon a long-standing relationship with JA Tsugaru Mirai. Redhorse Corporation has been supporting Hirosaki City’s hometown tax donations since 2019, and through these efforts, they formed a strong partnership with JA Tsugaru Mirai. Roadside station “Hiro-no-eki Sun Festa Ishikawa” sought to expand its product offerings to better reflect the uniqueness of the region, leveraging its customer-drawing power. As part of this, the proposal to utilize non-standard apples was made, sparking the development of a new product.
The newly released “Hirosaki Tiramisu” is a lightly sweetened, innovative dessert made by layering mascarpone cheese cream with apple preserves. It features the refreshing flavor of apples and has received high praise from local stakeholders who sampled it.
The product is manufactured by Jouryu Co., Ltd., based in Osaka Prefecture. Their extensive experience and proactive spirit played a key role in supporting the development of this product.
Redhorse Corporation is not only involved in supporting hometown tax donation programs but also focuses on issue-solving product development that highlights regional characteristics. By 2024, the company had collaborated with over 20 local governments nationwide to develop more than 50 items. Their goal is to create region-defining products with local producers, contributing to the establishment of local brands.
